Pepper Poppers

Ingredients

1 - 8oz. Cream cheese, softened
1 cup shredded sharp cheddar cheese
1 cup shredded Monterey Jack cheese
6 bacon strips, cooked and crumbled
¼ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon chili powder
1 pound fresh jalapenos, halved lengthwise and seeded
½ cup dried bread crumbs

Instructions

In a large mixing bowl, combine the cheeses, bacon and seasonings; mix well. Spoon about 2 tablespoonfuls into each half. Roll in bread crumbs.

Place in a greased 15 x 10 x 1 baking pan. Bake uncovered at 300 for 20 minutes. Yields about 2 dozen.

Canadian Bacon Stuffed Mushrooms

Ingredients

30 to 35 large fresh mushrooms
¼ pound Canadian bacon, diced
1/3 cup diced sweet red pepper
¼ cup diced red onion
1 teaspoon minced garlic
½ teaspoon salt
½ teaspoon pepper
2 tablespoon vegetable oil
½ cup crumbled feta cheese
½ cup shredded cheddar cheese

Instructions

Remove stems from the mushrooms; set caps aside. In a large bowl combine bacon, red pepper, onion, garlic, salt and pepper. Stir in cheeses and oil. Fill each mushroom cap with about 1 tablespoon of filling.

Place on foil - lined baking sheet. Bake at 400 for 16 - 20 minutes.

Lobster Mac and Cheese

Ingredients

Olive oil
1 pound elbow Macaroni
3 cups milk
1 cup heavy cream
6 Tablespoons Flour
6 Tablespoons Butter
2 cups Gruyere cheese, grated
3 cups fontina, grated
¼ cup Parmigiano-Reggiano,grated
2 cups extra sharp Cheddar, grated
½ teaspoon fresh grind pepper
½ teaspoon nutmeg
1 ½ pond lobster meat
1 ½ cups fresh  toasted white bread crumbs

Instructions

Drizzle olive oil into a large pot of boiling salted water. Add pasta and cook 6 to 8 minutes until tender.

Meanwhile , heat the milk and cream in saucepan. Do not boil. In a large pot, melt butter and add the flour . Cook over low heat for 2 minutes stirring with a whisk. Still whisking add the milk mixture and cook for two more minutes. Turn off the heat and add the cheeses, 1 teaspoon salt, pepper and nutmeg. Add the cooked macaroni, lobster and stir well.

Place the mixture into 8 individual gratin dishes. Add the bread crumbs to the top and serve.
